Follow our simple step-by-step guide below to brew, bottle, and enjoy your kombucha with confidence:


Kombucha 101 – Recipe

  1. Add boiling water to a glass container or jar of your choice. (Your starter kit is sufficient to make 2 L of kombucha.)

  2. Steep your tea for 10–15 minutes using 3 tea bags per 1 L of water. (Use black or green tea – no flavoured or herbal teas.)

  3. Remove the tea bags and dissolve ±90 g of white cane sugar per litre of tea.

  4. Allow the sweet tea to cool to room temperature, then add your kombucha starter (±150 ml per litre) and SCOBY.

  5. Cover with a cloth or coffee filter and secure with a rubber band. (Do not seal the container, as carbon dioxide builds up.)

  6. Ferment for 7–14 days out of direct sunlight. Taste after day 7 until it reaches your perfect balance of sweet and tangy.

  7. Once ready, bottle your kombucha in a sealable glass container and refrigerate. (Unless infusing or carbonating.)

  8. Each batch produces a new SCOBY — you can store it or share it with a friend. (Refer to the “SCOBY Hotel” below for storage instructions.)


Optional: Carbonation & Infusion

  1. After bottling, infuse your kombucha with fresh fruit or herbs for added flavour.

  2. Seal the bottle and leave it at room temperature for 5–7 days, then refrigerate. (You can also carbonate without infusing.)


SCOBY Hotel – Storage Tips

  1. If you’re not brewing immediately, keep your SCOBYs healthy by storing them in leftover kombucha from your last batch.

  2. In a large jar, add enough kombucha to fully submerge your SCOBYs and cover with a cloth or coffee filter. (Do not seal.)

  3. Store in a dark place and refresh with sweet tea every 4–6 weeks to maintain vitality.
